667 Neighbor of the Beast

Our American India Pale Ale uses bountiful amounts of American two row malted barley and a sprinkle of Maris Otter in combination with three bold whole cone American hops. The hops are individually transitioned throughout the boil to highlight each hop's bittering and flavoring characteristics. Post-fermentation, 667 is dry hopped with vast amounts of the same three hops. The beer is named after a phrase someone scrawled into the wall of our favorite college watering hole
Tasting notes: orange nectar with a frothy white head; medium malt body; seriously chocked full of piney-grapefruit flavor and aroma finishing with hints of peach and honey. A hop head's soused hallucination.

A SMaSH, Single Malt and Single Hop, IPA using a caboodle (technical term for a large amount of malt) of malt and a new hop released in 2012 called Mosaic (HBC 369). It is a daughter of Simcoe (YCR 14). Whole cone Mosaic is used for bittering, flavoring, and aroma in the kettle; it is also massively dry hopped. The beer is named after a Texas Heroine.
Tasting notes: chalk-white head with a very clean malt backbone. The hops impart strong grapefruit, pineapple, and blueberry flavor and aroma. A strong beer that is extremely quaffable.

Our Brown Ale gives a nod to the Northern English Brown style. However, since defeating the English in 1783, it is analogistic that the American version be stronger to reflect on England's vanquishment. Gentleman's Relish uses Maris Otter malt as the base, augmented with dark crystal and chocolate malts. Whole cone English hops are used throughout the boil, imparting their characteristic smooth bitterness. The beer is named after an Englishman's favorite snack, an anchovy paste, typically eaten on toast.
Tasting notes: dark brown with a thick creamy head; chocolate-caramelly-nuttiness yields to a clean hoppy finish. It makes one almost wish that the English were still here to share a pint of this fine brew...almost.

Our Imperial India Pale Ale uses Golden Promise malt and two very pungent whole cone American hops. This brew is hopped so heavily that post-boil, after all of the wort has been transferred to the fermenter, the hop mass at the bottom of the kettle is more than one foot deep. Post-fermentation, Jabberwocky is dry hopped with colossal amounts of the same two hops. The beer is named after a monster we all hold dear.
Tasting notes: deep golden with a head made of hop resin; light malt breadiness hidden beneath an onslaught of pungent hoppy tropical-fruitiness. Shun the frumious Bandersnatch! Shun it!.

Our American Strong Ale uses American two row malted barley and the darkest caramelized malts available. It is extravagantly hopped with four robust whole cone American hops; 68% of which are added to boil during the last fifteen minutes! The beer is named after two things that strike fear in those who are scared of them and such.
Tasting notes: dark amber with a sticky-toffee colored head; malty sweetness with hints of dried fruit and burnt sugar; nicely balanced with aggressive hop flavor. This brew is so good it inspired a movie.
Zeno's Pale Ale
ABV: 5.5%IBUs: 39
Zeno's Pale Ale is around just long enough to stop in, crash on your couch, then leave like an old college roommate.
Tasting notes: American Two Row malted barley, Citra & Mosaic hops in the kettle, dry hopped with Citra & Denali, and our house yeast. Hazy gold with a fluffy white head. Lemon, pine, and hop-zest in the nose. Light quaffable body with a hoppy citrus bite. Finishes with a smooth sweet breadiness and clean bitterness.
Beer Keeper Braggot
ABV: 7.0%IBUs: 46
marὐaweeka! Po-Cha-Na-Quar-Hip is our Braggot, a mead-ale hybrid dating back to the Middle Ages. We brewed it in collaboration with the local Magnolia Meadery, Enchanted Manor, who supplies mead to the Texas Renaissance Festival every year. Our Braggot uses American two row malt and raw, unfiltered, unpasteurized Texas wildflower honey from Montgomery County. Whole cone American hops are added to the kettle; it is also dry hopped. hakai braggot nʉmʉ nahniaka?
This ale was inspired by the Texas Penateka Comanche War Chief Potsʉnakwahipʉ, or Po-Cha-Na-Quar-Hip. Po-Cha-Na-Quar-Hip's leadership helped to shape the early history of Texas. The Penateka were known as Pehnahterkuh or "honey eaters". ʉnha nʉ nakisupanaʔinʉ̱?
Tasting notes: bright orange-yellow with a hoppy citrus and honey scented white head; robust wildflower honey and hop flavor, followed by clean hop bitterness, finishing with light herbally sweetness. Cheers Potsʉnakwahipʉ!
The Wanderer Barley Wine
ABV: 10.1%IBUs: 70
Our barley wine is made with Extra-pale Maris Otter and Monastique malts. A very new hop, Sabro, was used exclusively in both the kettle and dry hop.
Tasting notes: Body is thick, but not cloyingly so; sweet, nutty maltiness. Well balanced, with a nice dank hoppiness.
El Cuero White Stout
ABV: 8.1%IBUs: 40
El Cuero White Stout is a whimsical beer characterized by the disconnect between its appearance and flavor; using Maris Otter, Caramalt, flaked oats, flaked barley, Ecuadorian Cacao Nibs, and Cuvee Coffee. The Cuvee Coffee is brewed with Colombian Coffee from the Las Mingas Project co-op. Tasting notes: Pours a rich yellow, with white head, but drinks with all of the complex chocolate and roasted coffee flavors expected from a stout.
UndeadHeadEd Ghost Chile Porter
ABV: 6.9%IBUs: 36
This brew comes from the mind of our friend Ed: brewer, beer lover, Grateful Dead fan, and eventual zombie. It uses a ridiculous number of malts and American whole cone hops. Ghost Chiles were added both in the kettle and post-fermentation.
Tasting notes: dark chocolate in color with a rich brown head; strong, sweet, & roasty malt body; subtle chile flavor and hop bite.
Knecht Ruprecht Series
The Knecht Ruprecht series is a holiday inspired single batch, changing each year.
Knecht Ruprecht 2018:

Tasting Notes: Extra Pale Maris Otter, Caramalt, flaked oats, flaked barley, Ecuadorian Cacao Nibs, and Cuvee Coffee. The Cuvee Coffee is brewed with Colombian Coffee from the Las Mingas Project co-op.
Knecht Ruprecht 2017:
Toasted Oatmeal Porter
ABV: 8.0%IBUs: 35
This year we brewed a Toasted Oatmeal Porter.
Tasting Notes: Dark chocolate colored head. Hints of malt, hops, and toasted oatmeal in the nose. Beer is black with a medium body. Tastes initially of sweet toffee and roasted grain. Finishes slightly dry with a delicate bitterness.
Knecht Ruprecht IV 2016:
Chocolate Coffee Milk Stout
ABV: 7.0%IBUs: 42
A Chocolate Coffee Milk Stout. Rich, delicious coffee from Houston's Southside Espresso, freshly roasted Venezuelan cocoa nibs, and a touch of milk sugar marry beautifully with this American Stout.
Tasting Notes: big chocolate coffee nose; sweet roasty maltiness with a nice chocolate coffee backbone.
Knecht Ruprecht 2015:
Smoked Imperial Stout
ABV: 9.0%IBUs: 40
Our third holiday ale is a Smoked Imperial Stout. It uses Pale Ale Malt as the base, Double Roasted Crystal, Roasted Barley, Beechwood Smoked Malt, and a mixture of English and American hops.
Tasting Notes: black as night with an cappuccino colored head; thick body, caramelly sweet, with notes of toffee, nuts, and toast; subtle smoke flavor initially and on the finish
Knecht Ruprecht 2014:
Ghost Chili Robust Porter
ABV: 6.9%IBUs: 36
Our second holiday ale is a Ghost Chile Robust Porter. It uses Maris Otter as the base malt, a crazy variety of specialty malts, and American hops. Ghost Chiles were added both in the kettle and post-fermentation. This brew was a favorite of ours and has become our Fall Seasonal.
Tasting Notes: dark chocolate in color with a rich head; strong malt body; subtle chile flavor and bite.
Knecht Ruprecht 2013:
Dark Chocolate Coffee Milk Stout
ABV: 5.8%IBUs: 20
Our first holiday ale is a Dark Chocolate Coffee Milk Stout. It uses Maris Otter as the base malt in combination with English hops and Extra Dark Cocoa. Post-fermentation, fresh cold pressed coffee from our local coffee roaster, Righteous Bros, was added and the brew was aged a bit. This beer is named after Santa's hit man. Pronounce it like this: Knecht Ruprecht.
Tasting Notes: black as night with a chocolate colored head; nice malt body; strong roasty flavors from the cocoa and roasted barley. The Grinch has nothing on Knecht Ruprecht.
The Zythophile Lone Hop Series
Due to the large amount of new hops being developed, we began a new single hop series entitled Zythophile Lone Hop Ale. Each batch uncovers the true essence of the hop. Our first batch was brewed in March of 2013. You may have heard of it: Yellow Rose. We typically release a Zythophile a couple times each year.
Zythophile Lone Hop Ale: HBC 522
ABV: 6.5%IBUs: 61
American Two Row malted barley, HBC522 hops, and our house yeast. Appearance is translucent orange with a solid white head. Nose is hoppy citrus with hints of dill and melon. Tastes initially of stone fruit and sweet malt; finishes with a crisp bitterness.
Zythophile Lone Hop Ale: Calypso
ABV: 6.6%IBUs: 64
American Two Row malted barley, Calypso hops, and House Yeast. Appearance is hazy yellow-orange with a solid white head. Nose is light sweet malt followed by lemon-lime citrus aroma. Taste is like being punched in the mouth by Mike Tyson with gloves made of hop cones: bold, bitter, and assertive. Finishes tart, dry, and bready.
Houston Daisy Chain - Zythophile Lone Hop Ale: Denali
ABV: 6.7%IBUs: 64
American Two Row malted barley, Denali hops, and Houston Daisy Chain Yeast. Appearance is hazy yellow-orange with a solid white head. Nose is all hops: tropical fruits, lemon grass, and peaches. Taste is dry with tropical fruits, more fruity than citrusy, followed by clean bitterness and lemon.
Zythophile Lone Hop Ale: Mandarina Bavaria
ABV: 6.6%IBUs: 56
American Two Row malted barley, German Mandarina Bavaria hops (daughter of Cascade), and our house yeast. Appearance is hazy orange with a solid white head. Nose is tangerine and melon. Tastes initially of sweet orange; finishes with a light citrus flavor and smooth bitterness.
Zythophile Lone Hop Ale: Vic Secret
ABV: 6.6%IBUs: 67
American Two Row malted barley, Australian Vic Secret hops (sister to Topaz), and our house yeast. Appearance is hazy orange with a solid white head. Nose is light bready malt with a complex mix of pine, lemon grass, pineapple, and guava. Tastes initially of light malt sweetness and grapefruit; this is then followed by an equally complex flavor profile with hints of lemon, guava, and basil.
Zythophile Lone Hop Ale: Ella
ABV: 6.6%IBUs: 66
American Two Row malted barley, Australian Ella hops (half-sister to Galaxy), and our house yeast. Appearance is hazy orange with a solid white head. Nose is light bready malt with hints of orange and pine. Tastes initially of light malt sweetness and orange zest; followed by pungent grapefruit peel bitterness.
Zythophile Lone Hop Ale: Loral
ABV: 6.6%IBUs: 61
Two Row malted barley, Loral hops (HBC 291), and our house yeast. The nose exhibits sharp lemon and hints of dark fruit. Tastes of smooth bitterness, finishing with stronger dark fruit notes. The complexity grows after a few sips. Cheers!

Tasting Notes: a very complex nose. It exhibits flavors of coconut, peach, tangerine, and lemon.

Tasting Notes: This hop exhibits a nice fruity & spicy nose. Very smooth bitterness with flavors of pine & sweet citrus.
Zythophile Dr. Rudi

American two-row malted barley, Munich Malt, and Dr. Rudi hops (New Zealand).
Tasting Notes: This hop exhibits a subtle yet complex nose of tangerine and lemongrass. Smooth bitterness with flavors of tropical fruit, tangerine, lime, and lemongrass.

Crisp Extra Pale Maris Otter, Chateau Monastique, and Enigma hops
Tasting Notes: Nose of light maltiness with hints of pineapple and mango. Initial flavor is bread, toffee, and nuttiness; yielding to a clean strong bitterness with notes of tropical fruit.

Tasting Notes: orange color with medium body. This hop imparts light tropical fruit & melon notes (maybe a hint of strawberry) with a sweet hoppiness and clean bitterness.

American two row malted barley, Maris Otter, a bit of wheat and crystal malt, and Rakau hops.
Tasting Notes: amber color with medium body. This hop imparts sharp floral notes with funky piney bitterness; phenolic flavors abound, as in Belgian ales.
